Let me just start by saying that these Corsicans know how to make a cheesecake!  Gabriel Gaté’s Corsican Cheesecake is a decadent, luscious and light take on the type of cheesecake we Australians are probably most familiar with.  This recipe is really easy, quick and let’s face it, just plain yummy.  Next time you need to make a cheesecake, I definitely recommend giving this one a go.

By the way, how is the scenery from tonight’s telecast?  Simply stunning.  Makes me wish I was on holiday somewhere sunny (and preferably French) right now…
